There are three principal methods for creating rosé wine: reducing juice contact with grape skins, blending and saignée. Dunstan produces its pink wine by the latter method, bleeding off a small quantity of juice from its somewhat larger output of Pinot Noir. The result is a refreshing mélange of strawberry, raspberry and rhubarb flavors. Pair it with salmon en croute or crab cakes.
